Ingredients:
- 2 pounds mushrooms (Baby Bella are best for flavor), chopped if desired.
- 1 Tbsp. oil (Avocado, Olive or Coconut).
- 3 Tbsp. Balsamic vinegar
- 2 Tbsp. Soy sauce (I use organic low sodium or you can use tamari).
- 3 cloves garlic, chopped ( I love garlic so I use more ).
- 1/2 teaspoon Thyme, chopped.
- Salt and pepper to taste ( Pink Himalayan salt is best or kosher).
Directions: 400 degrees (oven)
- Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper, arrange in a singe layer on a baking pan and roast in a preheated oven until the mushrooms are tender, about 20 minutes, mixing half way through.
